CHIA POTATO SALAD
 
Ingredients
  • 4 medium new potatoes, or 2 russet potatoes
  • 1 Tbsp. balsamic vinegar
  • 2 tsp. chia Seeds
  • ⅔ cup Vegenaise
  • 1 Tbsp. mustard
  • 3 Tbsp. fresh Parsley
  • sea salt and pepper
Instructions
  1. Cube potatoes as close to bite size as possible. Boil until tender but holding their shape. In a medium bowl, blend all remaining ingredients together well with a fork. When potatoes are done, add them stirring well to coat potatoes. Season with salt and pepper to taste. You may serve immediately or refrigerate for up to one hour then serve.
