Heat a griddle to medium high. (You can also use your favorite skillet). Melt 1 tsp coconut oil to prevent sticking.
Scoop ¼ cup pancake mix onto griddle per pancake, cooking until lightly browned on one side and mix sets. Gently flip and cook until golden. Serve warm with maple syrup or honey and fresh blueberries.
