TOMATO AND BASIL SALAD
- 2 lbs Yellow and Red Tomatoes (try heirloom)
- 1 bunch large leaf Basil
- ½ cup mixed fresh herbs – try parsley and thyme
- ¼ Cup Extra Virgin Olive Oil
- ⅛ cup Balsamic Vinegar
- sea salt and fresh pepper
- Dice Tomatoes. Wash basil and set aside or spin to dry. Chop all herbs finely. Mix all ingredients together and season with salt and pepper.
