SAUTEED VEGETABLES WITH CASHEWS
 
Ingredients
  • ½ cup vegetable broth
  • 1 cup each red and green bell peppers, sliced ½ inch strips
  • 1 cup onion, ½ inch strips
  • 1 cup snow peas
  • ¼ cup cashews
  • 2 tsp fresh lemon juice
  • salt and pepper
Instructions
  1. Mince garlic, slice onions and set aside for five minutes. Heat broth in a stainless steel skillet or wok over medium heat. As soon as broth steams, add bell peppers, garlic and onions, cover and sauté for 5 minutes. Add snow peas, then cover and sauté for 3 or 4 more minutes.
  2. Pour lemon juice over top and season as desired. Serve topped with cashews.
