STUFFED BELL PEPPERS
 
Ingredients
  • 2 Tbsp Olive Oil
  • 1 medium yellow onion, chopped
  • 4 large fresh chopped tomatoes
  • 1 lb. lean ground beef or bison
  • 2 cups cooked long grain brown rice
  • 2 Tbsp minced fresh parsley
  • salt & pepper
  • 6 large bell peppers, for fun, use a variety of colors
Instructions
  1. In a large skillet, heat oil over medium heat. Add onion and cook until softened, about 5 minutes. Add tomatoes, and bring to a boil. Cook until sauce has thickened, and add salt and pepper. Pour sauce into crockpot.
  2. Remove tops of peppers and seed. Set aside.
  3. In the same skillet, add ground beef or bison and brown. Stir frequently, breaking down as it cooks. Stir in rice and parsley. Add salt and pepper.
  4. Using a spoon, fill each pepper with some meat mixture – don’t pack tightly. Arrange peppers in crockpot side by side. Cook on low for 4 – 6 hours or high for 2 -3 hours. Peppers will be tender when done.
  5. Serve with sauce spooned over top.
