2 chicken breast, organic and open range or cage free, cut into strips
1 Tbsp Olive Oil
1 tsp cumin
1 tsp chili powder
Sea Salt, Pepper
fresh cilantro for topping
Corn tortillas, heated as pkg suggests
Instructions
Sauté onions, peppers and garlic in oil over medium heat until just starting to soften. Set aside. In same pan, add chicken strips and ⅛ cup of water, add seasonings. Cover and cook for 10 minutes, turn and cook 10 more minutes or until chicken is no longer pink. For a deeper flavor use vegetable broth (or chicken broth) in place of water.
