CHICKEN TACOS
Ingredients
- ½ Yellow onion,cut into strips
- 2 Red Peppers, cut into strips
- 2 cloves garlic, minced
- 2 chicken breast, organic and open range or cage free, cut into strips
- 1 Tbsp Olive Oil
- 1 tsp cumin
- 1 tsp chili powder
- Sea Salt, Pepper
- fresh cilantro for topping
- Corn tortillas, heated as pkg suggests
Instructions
- Sauté onions, peppers and garlic in oil over medium heat until just starting to soften. Set aside. In same pan, add chicken strips and ⅛ cup of water, add seasonings. Cover and cook for 10 minutes, turn and cook 10 more minutes or until chicken is no longer pink. For a deeper flavor use vegetable broth (or chicken broth) in place of water.
