STUFFED BELL PEPPERS
Ingredients
- 2 Tbsp Olive Oil
- 1 medium yellow onion, chopped
- 4 large fresh chopped tomatoes
- 1 lb. lean ground beef or bison
- 2 cups cooked long grain brown rice
- 2 Tbsp minced fresh parsley
- salt & pepper
- 6 large bell peppers, for fun, use a variety of colors
Instructions
- In a large skillet, heat oil over medium heat. Add onion and cook until softened, about 5 minutes. Add tomatoes, and bring to a boil. Cook until sauce has thickened, and add salt and pepper. Pour sauce into crockpot.
- Remove tops of peppers and seed. Set aside.
- In the same skillet, add ground beef or bison and brown. Stir frequently, breaking down as it cooks. Stir in rice and parsley. Add salt and pepper.
- Using a spoon, fill each pepper with some meat mixture – don’t pack tightly. Arrange peppers in crockpot side by side. Cook on low for 4 – 6 hours or high for 2 -3 hours. Peppers will be tender when done.
- Serve with sauce spooned over top.
