QUINOA SKILLET
Ingredients
- 1 lb. ground turkey or buffalo
- 1 Tbsp. olive oil
- 1 small onion, peeled and diced
- 1 green pepper, seeded and chopped
- 1 14-oz can diced organic roasted tomatoes
- 1½ Tbsp. chili powder
- 1 tsp. ground cumin
- 1 Cup red quinoa, rinsed
- 1½ Cup water
Instructions
- Heat water to boiling in a medium sauce pan. Add quinoa and cover. Reduce temperature to simmer. Cook about 20 minutes.
- In a medium skillet, brown ground meat. Drain and set aside. In same skillet saute onion, pepper, and tomatoes for about five to seven minutes until tender crisp. Add quinoa and meat, then add cumin and chili powder.
- Stir to combine well.
- Serve warm.
